Great ideas! Anyone else?
My pediatrician suggests not making a big deal out of what the kids eat and how much. She says they self-regulate and sometimes it feels like they eat a lot and sometimes it feels like they don't eat very much at all.
My kids are all about superheros and princesses, so anything that will give them super strength is good for them...we probably feel muscles at least 8-10 times per meal. And it is imperitive that you are sitting with them, not busy doing something else....that is my experience.
Set out fresh cut fruit and bamboo skewers and let the kids make fruit kabobs while you cook dinner. Anytime they participate in making dinner they eat more. Have them stir, add ingredients. Cut things with a plastic knife.

I think two keys are to keep it simple and to involve the kids in the prep time... gives you a project as well as nutrition.
