Tiger Pops Like

Description

Roar! We went through (and are still in) an anti-veggie phase. As such, I have to think of tricky ways to incorporate veggies into my son's diet. The carrot and apple layers looked like a tiger, which made them even more appealing to my tiger-obsessed son. (These are also very soothing for kids who are teething.)

Ingredients

Applesauce
1/2 bag of baby carrots
Water
Popsicle cups

Instructions

Boil carrots just long enough to soften them, about 5 minutes. Puree them in a blender until smooth, adding water as you blend to make them smoother and "pourable". Layer carrot puree with applesauce in popsicle cups and freeze until solid (at least 6 hours). You can also make this with homemade applesauce by baking apples until they are soft and then pureeing them in the blender.

*Note: Have fun experimenting!
Tiger Pop variation: substitute sweet potato puree
Bumble Bee Pops: applesauce and blueberry puree
Lady Bug Pops: strawberry puree with blueberries for the "spots"

Just made these - big hit. We also made a version of "bumblebee pops" with pineapples and blueberries instead of apple sauce!
