Simpe recipe of sunny side up eggs and turkey bacon dressed up as a skull & cross bones. I make eggs for breakfast regularly and turkey bacon on occasion for Sunday morning breakfast. Around the holiday I like to make food fun for my kids to get them into the holiday spirit.
2 slices of nitrite-free turkey bacon *
2 eggs (local farmer's market)
1 egg white
1 Tbsp shredded carrots
1 Tbsp ketchup
* I like to cook 1 whole package of turkey bacon and save the rest for later (I used Trader Joe's brand)
1. Pre-heat the oven to cook the bacon. Put the bacon in a 400° F oven, bake for about 10-15 minutes flipping once half way through. Set aside 2 strips of bacon and save the rest by freezing in a zip lock bag or store in the refrigerator for a few days. (Great to add bacon to salads or sandwiches!)
2. Spray a non-stick skillet with vegetable spray. Crack two whole eggs for the eyes and one egg white for the lower half of the skull.
3. Using a spatula carefully design the lower half of the skull. Cook the eggs until the whites are not runny and not undercooked. I like to put a lid on the pan to capture the steam to cook the yolks.
4. Take 2 cooked bacon strips, cut them in half. Add the cooked eggs onto a plate, take the bacon halves and place them on the corners of the eggs to resemble the cross-bones.
5. Have fun decorating the mouth with the shredded carrots and ketchup to enhance the eyes and nose.
