When a friend undergoing chemotherapy needed dinner brought into her home, I created this banana bread as dessert. Naturally sweetened and beautifully satisfying, this recipe to me is the ideal way baked goods should go into our bodies. Just the sort of thing I’d be willing to share with a sick friend, or a beloved child on whom I wish year and years of health.
2 eggs
4 egg whites
½ c. agave nectar
½ c. olive oil
3 organic bananas
1 c. flax
¾ tsp. baking powder
½ tsp. salt
2 c. whole wheat flour
1 drop each of orange, ginger, cinnamon essential oils (if desired)
In a large bowl, combine all ingredients. Beat together until well mixed. Spoon all the batter into a single, large bread pan which has been greased and floured. Bake in an oven preheated to 350 degrees for approximately 50 minutes, or until the center of the bread springs back to the touch. Cool, slice, enjoy.
