Why wait for special occasions to eat mashed potatoes? By dicing them into small pieces before boiling, you can have a bowl of real, high-in-nutrient potatoes ready for your dinner table in about 20 minutes. An option even better than pasta, because potatoes fill your babies bellies with natural carbs, rather than highly refined ones. Not to mention the flavor of this recipe, achieved with broth instead of butter, and a sprinkling of flavorful sharp cheddar rather than high-fat sour cream.

Ingredients

5-6 potatoes
1 cup vegetable or chicken broth
3 slices American cheese
1 tsp. onion powder
1/2 c. sharp cheddar cheese, grated
2 T. diced scallions
Salt & Pepper to taste

Instructions

Begin boiling water in a large pot with a little bit of salt added to the water. While you are waiting for the water to boil, peel potatoes, dice extremely small, then add them to the pot as soon as the water is boiling. Boil for 15-20 minutes, or just until the potatoes are soft and tender enough to mash.
Drain water from the pot, transfer the hot potatoes into a bowl and immediately add 1/2 cup of broth, onion powder, and the American cheese. Add salt and pepper to taste
Using an electric beater, mix the potatoes together until light and fluffy, adding more broth if needed to achieve the perfect mashed potato consistency.
Fold in the sharp cheddar and scallions. Serve immediately and enjoy!
