What better way to get your kids to eat healthy than to chop a few favorite ingredients into teensy tinsy pieces, toss it with a creamy dressing, and sneak it between two pieces of crisp, crunchy toast?
This recipe is so simple. Don't skip the step of browning your own chicken. The ready-to-eat stuff at the grocery store is waaay over-processed, and not nearly as moist as what you can make up at home.
1 T. butter
2 chicken breasts
1 pink-lady apple, chopped
2 scallions, chopped
2 c. Bibb lettuce, finely chopped
zest of 1 lemon
3 T. plain Greek yogurt
1 T. olive oil
1/2 tsp. dill weed
Salt & Pepper to taste
Salt & pepper chicken breast to taste. In a small skillet, over medium high heat, melt butter until sizzling. Immediately add chicken, brown on both sides, then cover, turn the heat down to medium and allow to cook another 5-7 minutes, or until cooked through. Remove from skillet, allow to cool, then dice into small pieces.
In a large bowl, combine apple, scallions, and lettuce. Add chicken breast. Stir in yogurt, olive oil and dill. Salt and pepper to taste.
Serve on bread, in a pita, or roll up on lettuce leaves and enjoy!
