One Fish, Two Fish. Quick Fish, Delish Fish. Like

I've never understood why some parents swear to pieces that their children are turned off by the flavor of fish. When done right, a tender piece of fish offers a delicate, palatable meal for even the most averse eaters.
This recipe is my very favorite way to serve fish to my family. It's so simple to prepare, and so utterly satisfying. The only problem we ever have when serving it to the kids is...I never seem to have enough. They always beg for more!

Ingredients

4 Swai or tilapia fillets
2 tbsp. olive oil
Handful fresh mint leaves
12-15 fresh garlic cloves, chopped
1 fresh scallion, chopped
Sprinkling of dried thyme
Salt & pepper a-plenty

Instructions

Preheat oven to 400 degrees.
Place each fish fillet in the center of a large piece of aluminum foil. Drizzle a 1/2 Tbsp. of olive oil over each fillet. Sprinkle remaining ingredients atop each fillet. Draw the edges of the foil around the fish, creating a loose pocket for the fish to cook in. Seal the pack tightly. This will allow the flavors to stay inside and steep themselves around the fish.
Bake in the preheated oven for 8-12 minutes, or until fish is cooked through.

I never even though of putting mint with my fish. I can't wait to try this out on my fish-loving kiddo and the non fish-loving kiddo, alike.
