Apricot & Butternut Squash Puree Like

Description

I started making my own baby food when my first son began solids. This is easy and nutritious. To make this a complete meal for a baby add barley, quinoa or oats.You can also use this for older children to add nutritional value to oatmeal, yogurt or pancakes.

Ingredients

1 cup of apricots
1 butternut squash
water

Instructions

1. Cut the squash in half (take seeds and pulp out) and place on a foil lined baking sheet. Bake in oven at 400 degrees until soft.

2. In a saucepan bring 1/2 cup of water to a boil and then add the apricots and reduce heat to med-low. Cook for about 10 minutes, until soft.

3. When both ingredients are done cooking place in a large bowl. With an immersion blender, blend ingredients with enough water to make it the right consistency for your child.

4. Put puree in ice cube tray and freeze. After frozen, pop them out and place in a large freezer baggie that you have labeled with the name of the food and date frozen.

5. To serve, just take out as many "ice cubes" as you need and defrost in the refrigerator, saucepan or microwave in glass dish.
