A comfort classic, low on sugar, and free from the same nasty preservatives you'll find in store-bought puddings.
Serve this creamy treat up as an after-school snack or post-dinner dessert. Your kids will thank you for it!
2 egg yolks
2 T. cornstarch
1/4 c. brown sugar
1 1/2 c. milk
3 T. butterscotch chips
In a medium saucepan, whisk together egg yolks, cornstarch, sugar, and milk over medium heat. Continue to heat just until mixture begins to thicken. Remove from heat and whisk in butterscotch chips. Transfer to a small bowl, cover with plastic wrap and refrigerate until fully thickened. Serve chilled, top with fresh whipped cream sweetened with honey, if desired.
