Gingerbread Cottage Pancakes Like

Description

Fluffy, warm with spice, bursting with whole grains and a low-sugar applesauce topping. Just like Hansel & Gretel, you're kids will want to gobble this right up.

Ingredients

2 egg whites
1 tsp. baking powder
2/3 c. whole wheat flour
1 tsp. ginger
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. cloves
1 Tbsp. molasses
1 Tbsp. evaporated cane juice or brown sugar
1/4 c. cottage cheese
1/2 c. sour milk (milk with 1 tsp. vinegar added)
1 Tbsp. butter, melted

Instructions

In a large bowl, beat egg whites until stiff peaks form. Add remaining ingredients and mix together just until nicely incorporated. Spoon onto a hot griddle and cook as you would regular pancakes.

Serve with pure maple syrup or Maple Spiced Applesauce (1 c. applesauce, 1/2 c. pure maple syrup, 1 tsp. vanilla, 1 tsp. cinnamon. Heat all in a saucepan until warm.)
