Looking for a warm, healthy, satisfying meal on for a cold, winter day? This hearty combination of herbed mushrooms and tofu tucked inside a whole-wheat tortilla is mild enough for even picky eaters to enjoy, and delicious enough to turn any day from grey to....hooray!
1 T. olive oil
1/2 c. extra-firm tofu, cut into tiny cubes
/4 tsp. cumin
1/4 c. mushrooms, well diced
1 T. roasted garlic, minced or crushed
A sprinkling of fresh thyme
1/4 c. roasted & salted pepitas (pumpkin seeds)
Salt & Pepper to taste
Sprinkle cumin over tofu. Season with salt and pepper.
Heat olive oil in a large skillet, over medium-high heat. Add seasoned tofu, mushrooms, and garlic to hot pan. Saute for 2-4 minutes, or just until edges of tofu have begun to brown. Remove from heat, sprinkle with fresh thyme, pepitas. Salt and pepper to taste. Serve immediately in a warm tortilla.
