Every year, I challenge my kids to a SUGAR-FREE SUMMER. Three months. Not a drop of sugar. Sounds like a tricky task? I thought so, too. Yet, this little brood of mine continually amaze me in their ability to stick with the no-sugar plan. Last summer, while attending a mid-summer potluck, the host offered big bowls of ice-cream. "Does it have sugar?" My six-year-old asked. Yes, replied the host. "Then, no thanks," my kiddo gratefully replied before heading back out to play. What a great kid, I thought.

Here is a quick, simple, and sugar free recipe which will yield the finest tasting fudgescicles for your own great kid.

Ingredients

1/4 c. pure maple syrup or honey
1 T. cocoa powder
1 T. corn starch
1 3/4 c. whole milk, soy milk, or almond milk

Instructions

In a medium saucepan, stir all ingredients together over medium heat. Bring just to the boiling point, when mixture begins to thicken. Allow to cool slightly before spooning into small cups. Press wooden sticks into the center of each filled cup. Freeze.

To remove frozen pops from cups, run hot water over the exterior of the cup for a few seconds.
